I am my father's daughter

From the bed of Allie......

Obvious statement yes, but the other day when I sat down to breakfast I laughed out loud.  See growing up my mom would make these wonderful dinners.  I mean tostadas, spaghetti and meatballs, chicken and rice, and a whole ton of things I can't remember or do justice to right now.  But 5 minutes before we would all sit down to eat, my dad would come into the kitchen to prepare his breakfast.  He would take out a baked potato, microwave some chopped frozen spinach, take out a can of refried beans, and get out the parmesan cheese.  Then, he would pile it all together on a plate and sit down with the rest of us as we sat down with our tasty homecooked meal.  We would all look at him like he was crazy (which was no more insulting than the smell of microwaved spinach wafting around the table) but he would just chuckle at us and continue eating his food.  Well, dad...this one's for you.

It's called (or I call it) oatmeal florentine.  You take some instant oats, add spinach, salt, pepper, sliced cheese, and top with a fried egg.  It's a nice variation on the chinese dumplings that I used to get on the way to class every morning.  Once you get over the weirdness of savory oatmeal, its quite tasty.
